Cut the ends off of the fresh green beans. Place all of them in a colander and rinse well under running water. Preheat the oven to 425° and move one rack to the third level.
Line a large enough baking sheet with foil*This is to be able to mix the seasonings around good and for easy clean up at the end
Line the green beans in a single layer on the baking sheet. Drizzle both the extra virgin olive oil and cajun seasoning overthe green beans. Let it cook for 12 minutes. Pull the baking sheet out of the oven and mix the green beans around with the spatula to make sure the seasonings are mixed in. *If you like, you can cook the green beans for another 3 minutes but it shouldn't need much longer than that. The green beans can be kept whole or cut in half. It's all up to you!
Adding sliced onions to this recipe is a really nice addition! Onions are a vegetable so it counts.
