Take a walk down memory lane with these comforting pan-fried corn cakes! These hoecakes have less sodium than a typical recipe.

Equipment

1 Non-stick skillet
1 whisk
1 Large mixing bowl
1 Spatula

Ingredients
  

  • 1 cup corn meal
  • 1 cup all-purpose flour
  • ¾ cup whole milk
  • 2 eggs
  • 2 tablespoon sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoon butter melted
  • 1 tablespoon olive oil use olive oil for baking

Instructions
 

  • Mix all dry ingredients together in a large bowl
  • Make a "hole' in the middle of the dry ingredients. Crack 2 eggs in the middle. Add melted butter and olive oil. Mix with a whisk. Slowly add milk to the eggs, mixing as you are pouring.
    *If this sounds too complicated you can just mix all the wet ingredients in a separate bowl for this step.
  • Mix dry ingredients with the wet ingredients until it is combined.

When using a 8 inch non-stick pan on medium high heat

  • Start with 1 teaspoon of olive oil for the pan, then pour batter in the pan. Flip hoecake when bubbles start to appear. Once flipped it should only need to cook for 1-2 minutes.
  • Continue until all the batter is gone. Only add oil to the pan as needed.

When using a 12-inch non-stick pan on medium high heat

  • *Using a larger pan will shave off 5 minutes of cooking time.
    Add 1 tablespoon of olive oil to the pan. Pour enough batter to make 3 hoecakes. Flip hoecake when bubbles start to appear. Once flipped it should only need to cook for 1-2 minutes.
  • Continue until all the batter is gone. Only add oil to the pan as needed.

Notes

  • To reduce cholesterol, use egg whites instead of the whole egg
  • I prefer to add 3 hoecakes to a larger pan, but some people go ahead and squeeze in 4 hoecakes. The preference is yours!
  • There is fine, medium grind and coarse grind. Coarse cornmeal gives it a texture and a bit of crunch. If you don't think you'll like that go for the fine cornmeal.
