Preheat oven to 400°. Add all dry ingredients in the bowl and mix well.
Add all wet ingredients to the dry ingredients. Mix well until the mixture starts to clump together a little (this is ok!).
*Optional: Line sheet pan with foil for easy cleanup. Spread the mixture on the sheet pan using a spatula. It can be clumped together. Put sheetpan on the bottom shelf in the oven. Let cook for 5 minutes. If it cooks longer it will burn.
Do not mix, let cool for at least 15 minutes, and transfer to a container with a tight lid.
Notes
The serving size is ¼ cupLeave the oats clumped together before baking and after you take it out of the oven. This gives you crunchy granola! Do not cook for more than 5 minutes. It will start to burn. Substitutions:
Use any type of nuts that you have on hand (walnuts, pecans)
Canola oil can be substituted for the extra light olive oil
Honey can be used instead of maple syrup
