Saute onion in butter until translucent. Go ahead and add your pepper here.
Add broth (or water) and the rest of the ingredients to the pot. Bring to a boil. Once it is at a boil, turn it down to low and let it cook for 20 minutes.
Your dish is done! If you want it a little more tender then you can let it cook longer.
Notes
You can use any type of broth or stock for this recipe (beef, chicken, or vegetable)
Water can be substituted for broth
Olive oil can be substituted for butter. Or you can leave off the fat altogether.
The serving size for the recipe is ½ cup. Serve yourself 1 cup of vegetables for an even healthier plate!
