Ingredients
  

  • 4 slices whole wheat bread
  • ½ cup whipped cream cheese
  • 2 tablespoon apricot jam feel free to use mix it up and use a different flavor jam
  • ½ cup soy milk (unsweet) can also use skim/1% milk
  • ¼ teaspoon pumpkin spice
  • ½ teaspoon Vanilla Extract
  • 1 tablespoon maple syrup
  • 4 egg whites

Instructions
 

  • Preheat oven to 375°. Spray a glass baking dish with nonstick spray (this is an important step to keep the bread from sticking to the bottom; instead of using spray you can also use a small amount of oil to coat the bottom of the pan).
  • In a small bowl, mix the cream cheese and apricot jam together. Evenly divide the cream cheese mixture on two pieces of whole wheat bread. When done, place the other slice of whole wheat bread on top and put both sandwiches in the baking dish.
  • In another small bowl, whisk together the milk, pumpkin spice, vanilla extract, maple syrup and egg whites. Pour mixture overtop the two sandwiches.
  • Place baking dish in the oven for 30 minutes.
  • Enjoy! What's really nice about this recipe is that you don't need any syrup! It's sweet enough the way it is.

Notes

You can eat this as is and not add anything else. If you would like to add more protein to this meal then scrambled eggs, Canadian bacon or turkey bacon would be good choices.
*I always like to recommend when scrambling eggs to add your favorite veggies like spinach, tomato, onion, peppers, or mushrooms! Any way to increase vegetables is a bonus to our health.
