Can You Make Stuffed French Toast Healthy?
The first time I tried stuffed French Toast I was at Keke’s Breakfast Café.
It was the blueberry French toast to be exact and it was deli-cious! If you pull up the nutrition information online, this meal is 670 calories, not counting if you added eggs and bacon.
It’s not exactly what you need if you’re trying to be healthy, maintain or lose weight. I’ve created a stuffed French toast that’s less than 400 calories and absolutely delicious!
One serving has adequate protein where you don’t really need to add anything else. Being that we are all different heights and body size some people may need more protein based on your individual needs.

Stuffed French Toast

Ingredients
- 4 slices whole wheat bread
- ½ cup whipped cream cheese
- 2 tablespoon apricot jam feel free to use mix it up and use a different flavor jam
- ½ cup soy milk (unsweet) can also use skim/1% milk
- ¼ teaspoon pumpkin spice
- ½ teaspoon Vanilla Extract
- 1 tablespoon maple syrup
- 4 egg whites
Instructions
- Preheat oven to 375°. Spray a glass baking dish with nonstick spray (this is an important step to keep the bread from sticking to the bottom; instead of using spray you can also use a small amount of oil to coat the bottom of the pan).
- In a small bowl, mix the cream cheese and apricot jam together. Evenly divide the cream cheese mixture on two pieces of whole wheat bread. When done, place the other slice of whole wheat bread on top and put both sandwiches in the baking dish.
- In another small bowl, whisk together the milk, pumpkin spice, vanilla extract, maple syrup and egg whites. Pour mixture overtop the two sandwiches.
- Place baking dish in the oven for 30 minutes.
- Enjoy! What's really nice about this recipe is that you don't need any syrup! It's sweet enough the way it is.
