Weekends are the perfect time to make a nice homemade breakfast. Unlike the weekdays where we might be flying by the seat of our pants out the door.

Instructions
Combine milk, cinnamon and vanilla extract in a shallow dish.
Example of shallow dishHint: Break the bagels in half. Place inner-side down in the dish. You can let them sit while your non-stick pan gets hot. The good news is it really doesn't need to soak for a long period of time!

Substitutions
- Bagel - instead of using white bagels, switch to whole grain or even blueberry!
- Milk - use your preference for milk. I have used unsweetened soymilk and it still comes out great!

This is a versatile recipe that you can get creative with!
- Baking spices
- Instead of cinnamon you can use pumpkin spice
- Try a different extract
- Instead of vanilla extract, maybe try coconut extract?
- Ground flaxseed
- If you really want to get creative, and add more nutrition, try this! Sprinkle the bagel with ground flaxseed right before placing in your hot pan.
Best Toppings
While you certainly could do regular or whipped cream cheese, what are the other options? I got some choices for you!
- Stewed Apples (no sugar added)
- Chopped fresh fruit
- Make a berry syrup
- Take frozen blueberries (or a mix), heat them on the stove or in the microwave to get the juices flowing. Optional: add cinnamon or vanilla extract. Drizzle syrup over the bagel with light drizzle of honey or maple syrup
Perfect Pairings - What to Eat With Bagel French Toast
Ok, so you might be wondering if this is a complete meal? What else can I add to it?
- Eggs with veggies
- Fruit (if you aren't already using it as a topping)
- Chicken sausage
- Turkey sausage/bacon
- Uncured pork bacon or ham
- Canadian bacon
- Want to keep it plant-based?
- Add nuts on top of the bagel
- If using cream cheese, sprinkle chia seeds on top
- Add tofu, seitan or tempeh
Storage
Fridge
Good for up to 3 days in the fridge. You can also mix the milk, cinnamon and vanilla extract ahead of time and place in the fridge in a container with a lid to use the next day.
Freezer
This recipe freezes really well! I like to place the bagels on a sheet pan with wax paper in the freezer. Once it's frozen transfer the bagels to a labeled freezer bag with the date.
How to Reheat
Option #1: Let it thaw overnight
You can take the bagels out the night before and let it thaw out in the fridge. Never let bagels thaw out on the kitchen countertop. This is a food safety risk.
To reheat the bagels, warm them in a toaster oven, the oven, microwave or toaster!
Option #2: Straight from the freezer
Heat the bagels in a toaster oven or oven at 350F. In a toaster oven you can go as low as 300 degrees to make sure they don't burn. I'd even recommend heating on the lower rack to make sure the top doesn't burn.
Top tips/Nutrition tips
When placing the inner-side of the bagel in the mixture make sure to get all of the bagel wet. No dry spots!
Swap a white bagel for a whole wheat bagel to add even more fiber to your meal. Want to stick with using a white bagel? Sprinkle ground flaxseed on both side of the bagel before placing in the hot pan. This will also boost the fiber of your meal.
Bagel French Toast (5 ingredients!)
Ingredients
- 2 bagels
- ½ cup milk this recipe uses unsweetened soymilk, but you can also use the milk of your choice
- 1 teaspoon vanilla extract
- 1 tablespoon olive oil
- ¼ teaspoon cinnamon
Instructions
- Mix milk, vanilla extract, and cinnamon in a shallow dish.
- Break bagels in half and place inner-side down in shallow dish.
- Heat olive oil in a non-stick pan on medium high heat. Once the pan is hot flip the bagels to wet the outter side of the bagel.
- Add bagels to the hot pan, inner-side down first!*It's important to place the bagel inner-side down first. I just think it makes the bagel taste and look even better. Cook 1-2 minutes and then flip and cook for another 1-2 minutes.

Notes
- Serving size = 1 halve but depending on your hunger/energy needs you may eat 1.5 or 2! I usually eat 1.5 and my husband will eat 2 halves (just to show as an example).
- Choosing a whole wheat bagel will increase the fiber
- Using a milk other than unsweetened soymilk will change the nutritional value. Whole milk will add more calories etc.
- Sprinkling your bagel with ground flaxseed prioring to cooking in the pan will add fiber
