    Pecan Pie Overnight Oats (Cold or Warm!)

    If pecan pie doesn't remind you of the holidays what does?! What better than to have a bowl of pecan pie overnight oats to remind you of this dessert AND it's healthy. But don't let the word "healthy" fool you. It's GOOD!

    Pecan Pie Overnight Oats: What You'll Need

    Ingredients

    • Old-fashioned oats
    • Maple syrup
    • Brown sugar
    • Milk of your choice
    • Unsalted pecans
    • Cinnamon, nutmeg

    Equipment

    • Mason jar or container with a tight lid
    • Measuring cups
    • Measuring spoons

    How To Make Pecan Pie Overnight Oats

    1. Mix all ingredients in a mason jar or a glass container that has a lid. You can use a plastic container if you don't plan on microwaving your oats.
      • If you'd like you can take a large container and triple this recipe to have breakfast ready for 3 days. Or you can take out 3 mason jars to triple this recipe.
    2. Store in the fridge overnight and eat in the morning!

    How To Store

    Store in the fridge and eat within 3-4 days. This recipe can be made individually in mason jars. Or you can triple the recipe in a container and just scoop it out and eat when you're ready!

    FAQ/Variations

    It might be tempting, but I do not recommend substituting honey for maple syrup. You want that distinct flavor that comes from the maple syrup for this.

    Can I Heat Up Overnight Oats?

    YES! Overnight oats can be warmed in the microwave from the mason jar or a glass container. This is one reason why I recommend starting your oats in a mason jar or glass container. Microwave times will vary. I usually heat mine for 1 minute and 30 seconds. Start with 1 minute and add more time as needed.

    Equipment

    Mason jar
    Glass container with lid
    measuring cups
    Measuring spoons

    Ingredients
      

    • ½ cup old fashioned oats
    • 2 tablespoon raw pecan pieces unsalted
    • 1 teaspoon pure maple syrup
    • ½ teaspoon brown sugar
    • 4 oz unsweetened soy milk *or your choice of milk
    • a few dashes of cinnamon and nutmeg

    Instructions
     

    • Add all ingredients to a mason jar or a container with a good tight lid.
    • Give it a good stir and store overnight in the fridge.
    • Eat it cold or warm it up in the microwave. *Microwave times will vary.

    Notes

    If you don't like cold oats then you can microwave them. Start with 1 minute and cook more as needed.  
    You can use whatever your preference is for milk!
    If ½ cup is too much then use ⅓ cup old-fashioned oats.
    *This recipe is very easy to double or triple so you have breakfast ready for a few days in the fridge.
