    MANGO YOGURT POPSICLES

    Mango is one of my favorite go-to's for iced treats like sherbert, sorbet, and Italian ice. So then I thought why not come up with a super easy popsicle recipe to share with others who love mango just as much as I do! I really like simplicity. Especially when talking about teaching others how to make healthy food choices and how preparing these foods doesn't have to take a day and a half to do! As a Registered Dietitian, I enjoy teaching people how to incorporate healthy food choices and habits.

    This recipe will suit your needs if you want a guilt-free dessert or a snack on a hot summer day.

    All you need for this recipe is

    1. Frozen mango
    2. Plain unsweetened kefir
    3. Fresh ginger root (shown below in the picture with my hands)

    WHY IS KEFIR SO GOOD FOR YOU?

    Kefir is tart and tangy. Most people call it yogurt in liquid form. Here are some of the health benefits of kefir:

    • Supports our immune system
    • Improves gut health and helps those with gut disorders
    • It can be suitable for people who are lactose intolerant
    • A great source of probiotics
      • What are probiotics? “Good” bacteria that have beneficial effects in the body when ingested. They help to keep our friendly bacteria balanced in the gut. Hint: This is why probiotics are essential for anyone battling diarrhea, IBS, etc. 
    • May help support digestion
    • Helps to improve bone density
    • Has the possibility of being protective against cancer
      • Why? Fermented dairy products like kefir may suppress early-stage tumors and delay the activities that convert compounds to carcinogens. Carcinogens are cancer-causing agents.

    Mango Yogurt Frozen Pops with Ginger

    Equipment

    blender
    Liquid measuring cup
    Knife
    Cutting board
    Popsicle molds

    Ingredients
      

    • 3 cup frozen mango
    • ½ cup plain, unsweetened kefir
    • fresh ginger I used a "thumbs length" for the amount of ginger. You can adjust the amount to use more or less.

    Instructions
     

    • Use a knife to remove the skin from the ginger then rinse off. Put all ingredients in a blender and blend well.
    • Pour into 6 popsicle molds. Freeze overnight or for at least 4 hours.

    Notes

    Enjoy within 1 month of freezing!
    Kefir is like a drinkable yogurt and so it can be swapped for yogurt in recipes such as this.
