When should I add cabbage to a slow cooker?
After you've added the broth, onion and seasonings fill the slow cooker to the top with cabbage (as shown in photo). The lid should fit nicely.
Although I will say, if there is a small amount of cabbage left I stuff it on top and still place the lid on. It may not fit nicely, but eventually the cabbage cooks down anyway.
How Long to Cook Cabbage in Slow Cooker
If you like tender cabbage, cook on high for 4 hours. If you like it less tender with still a bit of a crunch, I'd recommend to check it around 3 hours when cooking on high.
Everyone has a different preference for tenderness/crunch factor for vegetables. These are general guidelines.
Tip: You can also cook crockpot cabbage on low for 7-8 hours.
How to Make Slow Cooker Cabbage Vegetarian
Simply replace chicken broth with vegetable broth to make this recipe vegetarian. You may also use better than bouillon vegetable base and omit adding salt.

Nope, not at all. You don’t need to soak the cabbage before cooking in the slow cooker.
Can you overcook cabbage?
Yes, cabbage cooked too long can turn into mush, regardless of if it’s cooked in a crockpot or on the stove. Some people like it more tender than others.

- 1 small head of green cabbage washed and cut
- 1 small onion, chopped 1 cup of chopped onion
- 4 cups unsalted chicken broth
- 2 tablespoon olive oil
- 1 teaspoon salt
- 2 teaspoon thyme dried
- 1 teaspoon black pepper
- 1.5 teaspoon garlic powder
- 4 bay leaves dried
Instructions
- Add broth, onion and all the seasonings to the slow cooker then stir together.
- Add cabbage to completely to the top of the slow cooker.
- Cook on HIGH heat.
At the 3 hour mark:
- Depending on your preference for level of tenderness, you can start to check cabbage at the 3 hour mark. Between 3 hours and 30 minutes up to 4 hours is tender.
- Give it a good stir before serving and enjoy!
