What to do with leftover cornbread?
Freeze it. Cornbread, corn muffins or even hoecakes (cornbread flapjacks) can be frozen if you have extras.
Method #1: Place them in-between wax paper, then put inside a freezer bag. Label the bag with the name and date. For best quality enjoy within 3 months.
Method #2: You can also freeze them on a sheet pan layered with wax paper. After it's frozen, then you can individually add the hoecakes to a freezer bag with a label.
