    Refreshing Honey Lemon Vinaigrette

    "A light and refreshing honey lemon dressing for a change of pace on your next green salad"

    You had me at honey and lemon. Besides pairing together perfectly with a nice hot cup of tea, honey and lemon make a refreshing salad dressing. Seasoned whole wheat croutons pair nicely with this honey lemon vinaigrette as well.

      Ingredients

      A simple salad dressing can be made with a handful of key ingredients. The base is olive oil, vinegar and of course honey. Feel free to adjust the honey or leave out the salt. Although the great thing about this recipe is that it isn't a lot of sugar or salt.

      Ingredients for honey lemon vinaigrette
      • olive oil for marinades/dressings
      • a whole lemon 
      • honey
      • apple cider vinegar
      • minced garlic
      • salt
      • black pepper

      Instructions

      Step 1: Pour olive oil in to mason jar.

      Step 2: Squeeze lemon juice in a separate container or use a strainer (like pictured below). If using a small strainer, place it over the mason jar and then squeeze the whole lemon. The strainer helps to catch all the seeds.

      Step 3: Put all remaining ingredients in mason jar and shake.

      If you don't have a mason jar: Add all ingredients to a medium size bowl that has a lid. Mix ingredients with a whisk until combined and cover with a lid.

      Substitutions

      You can try this recipe with different vinegars. Red Wine vinegar would probably be very tasty with this combination of flavors.

      Other vinegars to consider would be Balsamic or White Wine.

      Storage

      For best quality, use within 4 days and store in the fridge.

      Ways to Enjoy Honey Lemon Vinaigrette

      Looking to add more veggies to your life? Here's a few easy tips below.

      • As a dip for celery, carrot sticks or sliced cucumber
      • Drizzled over sliced cherry tomatoes with diced fresh mozzarella

      Mom Tip

      If your little ones are big enough, let them shake the mason jar to mix the dressing. It'll get them involved, hopefully interested and more likely to want to try it at meal time.

      Equipment

      1 Mason jar 16 ounces is fine
      1 Small Strainer

      Ingredients
        

      • ½ cup olive oil for marinades/dressings
      • 1 whole lemon squeezed
      • 1.5 tablespoon honey
      • 1 tablespoon apple cider vinegar
      • ½ teaspoon minced garlic
      • ¼ teaspoon salt
      • ¼ teaspoon black pepper
      • 1.5 tablespoon dijon mustard

      Instructions
       

      • Add olive oil to the mason jar. Squeeze the juice of a whole lemon, then add to mason jar. Add all remaining ingredients.
      • Put the lid on the mason jar tightly and then shake! Enjoy immediately or store in the fridge for up to 4 days.

      If you don't have a mason jar:

      • Add all ingredients to a medium size bowl that has a lid. Mix ingredients with a whisk until combined and cover with a lid.

      Notes

      Tips on squeezing the lemon:
      • Squeeze in a separate container. It makes it easier to remove all the seeds before adding to the olive oil.
      • Or you can put a small strainer (similar to this) on top of the mason jar. Then squeeze the lemon over it so it catches the seeds. 
      This recipe makes ~13 tablespoons. 
      Give it a good shake after taking it out of the fridge before pouring on your salad.
